1 lb (450g) boneless, skinless chicken thighs

1/4 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 garlic cloves, minced

1-inch piece of ginger, grated

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon sesame seeds

2 green onions, chopped (for garnish)

Cooked jasmine rice (for serving)

Marinate the Chicken: In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Add the chicken thighs to the marinade, cover, and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Chicken: Heat a non-stick skillet or grill pan over medium heat. Remove chicken from the marinade (reserve the marinade) and cook the thighs for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the pan and let it rest for a few minutes.

      Make the Teriyaki Sauce: In the same pan, add the reserved marinade. Bring it to a simmer over medium heat. In a small bowl, mix cornstarch with water until smooth. Add the cornstarch slurry to the sauce and stir continuously for about 2 minutes until the sauce thickens.

        Slice and Serve: Once the chicken has rested, slice it into bite-sized pieces. Toss the sliced chicken in the thickened teriyaki sauce until well coated.

          Plate the Dish: Serve the chicken over a bed of cooked jasmine rice, drizzling extra teriyaki sauce on top. Sprinkle sesame seeds and chopped green onions for garnish.
