Ingredients

2 cups cooked chicken, shredded

1 cup frozen mixed vegetables (carrots, peas, corn)

1 can cream of chicken soup (10.5 oz)

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried thyme

½ teaspoon black pepper

1 cup cheddar cheese, shredded

1 tablespoon olive oil

1 package refrigerated biscuit dough (8 biscuits)

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 375°F (190°C).

In a large mixing bowl, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, thyme, and black pepper. Stir until well mixed.

In a greased 9x13-inch baking dish, pour the chicken mixture evenly across the bottom.

Sprinkle the shredded cheddar cheese evenly over the chicken mixture.

Open the refrigerated biscuit dough and cut each biscuit into quarters. Distribute the biscuit pieces on top of the cheese layer, ensuring they are evenly spread out.

Drizzle olive oil over the biscuit pieces for added flavor and browning.

Bake in the preheated oven for 30-35 minutes, or until the biscuit tops are golden brown and cooked through, and the filling is bubbling.

Once baked, remove the casserole from the oven and let it cool for a few minutes before serving.

Garnish with chopped fresh parsley for a pop of color and aroma.
