4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup Parmesan cheese, grated

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

1/4 teaspoon red pepper flakes (optional)

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and chopped spinach, and sauté until the spinach is wilted (about 2-3 minutes).

      In a mixing bowl, combine the sautéed spinach, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes. Mix well to create the stuffing.

        Carefully slice each chicken breast horizontally to create a pocket, ensuring you do not cut all the way through.

          Stuff each chicken breast with the cheesy spinach mixture, using toothpicks to secure the opening if necessary.

            Heat the remaining tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear each stuffed chicken breast for 3-4 minutes on each side until golden brown.

              Once seared, sprinkle the remaining mozzarella cheese over the top of each chicken breast.

                Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).

                  Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.

                    Garnish with fresh parsley and serve warm with your choice of sides.
