1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/4 cup soy sauce

1/4 cup apple cider vinegar

1/4 cup brown sugar

2 tablespoons honey

2 tablespoons ketchup

1 tablespoon sesame oil

3 cloves garlic, minced

1 inch ginger, grated

1/4 teaspoon red pepper flakes (optional)

2 green onions, sliced (for garnish)

Cooked rice (for serving)

Instructions
 

In a medium bowl, whisk together the soy sauce, apple cider vinegar, brown sugar, honey, ketchup, sesame oil, minced garlic, ginger, and red pepper flakes (if using) until well combined.

    In a large skillet or wok, heat a splash of oil over medium-high heat. Add the chicken pieces to the skillet in a single layer. Sear for about 3-4 minutes until they are golden brown on one side.

      Flip the chicken, and then pour the sauce mixture over the browned chicken. Stir well to coat the chicken pieces.

        Reduce the heat to medium and let the chicken simmer in the sauce for about 10-15 minutes, stirring occasionally. The sauce will thicken and glaze the chicken.

          Once the chicken is cooked through and the sauce has thickened to your desired consistency, remove from heat.

            Serve the bourbon chicken over cooked rice and garnish with sliced green onions.
