1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup packed light brown sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup pastry cream (store-bought or homemade)

4 oz semi-sweet chocolate, chopped

1 tablespoon coconut oil (for the chocolate glaze)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.

        Add Egg and Vanilla: Mix in the egg and vanilla extract until well combined.

          Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

            Scoop Cookie Mixture: Using a small cookie scoop or tablespoon, drop cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
