Easy Beef Empanadas

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 medium potato, peeled and diced small

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon chili powder

Salt and pepper to taste

1 cup beef broth

1 tablespoon olive oil

1 package store-bought empanada dough (for about 12-15 empanadas)

1 egg, beaten (for egg wash)

Fresh cilantro, chopped, for garnish (optional)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.

      Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).

        Stir in the diced potatoes, ground cumin, paprika, chili powder, salt, and pepper. Mix well to combine all the flavors.

          Pour in the beef broth and bring to a simmer. Cover and let cook for about 10 minutes, or until the potatoes are tender. If the mixture gets too dry, you can add a bit more broth.

            Remove from heat and let the beef mixture cool slightly.

              Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

                On a lightly floured surface, take one empanada dough disc and place a spoonful (about 1 tablespoon) of the beef mixture in the center.

                  Fold the dough over the filling to create a half-moon shape. Press the edges to seal, using a fork to create a decorative edge if desired. Repeat with the remaining dough and filling.

                    Place the filled empanadas on the prepared baking sheet. Brush the tops of each empanada with the beaten egg to give them a nice golden color when baked.

                      Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.

                        Remove from the oven and let cool for a few minutes. Garnish with fresh chopped cilantro if desired.
