Ingredients

6 pork sausages (your choice of flavor)

4 large russet potatoes, peeled and cubed

1/4 cup milk

2 tablespoons butter

Salt and pepper to taste

1 large onion, thinly sliced

1 tablespoon olive oil

2 tablespoons all-purpose flour

2 cups beef or vegetable broth

1 teaspoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions

Cook the Sausages: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sausages and cook until golden brown on all sides, about 15 minutes. Remove from the pan and set aside.

Prepare the Mashed Potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot. Add milk, butter, salt, and pepper, then mash until smooth and creamy.

Make the Onion Gravy: In the same skillet used for the sausages, add sliced onions. Cook over medium heat, stirring occasionally until caramelized, about 10-12 minutes. Sprinkle in the flour and stir well to combine, cooking for an additional 2 minutes.

Create the Gravy: Gradually pour in the broth while stirring continuously to prevent lumps. Add the Worcestershire sauce and bring to a simmer. Let it cook for about 5 minutes, until it thickens. Adjust seasoning with salt and pepper as needed.

Combine and Serve: Slice the sausages into large pieces (optional) and return them to the gravy, stirring to coat. Serve a generous helping of mashed potatoes with the sausages and onion gravy on top.
