Ingredients

8 oz elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

4 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon mustard powder

Salt and pepper to taste

1 cup panko bread crumbs

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 350°F (175°C).

In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook, stirring constantly, for about 1-2 minutes until slightly golden brown to make a roux.

Slowly pour in the milk while continuing to whisk, ensuring there are no lumps. Cook for about 5-7 minutes, stirring frequently until the sauce thickens.

Reduce the heat to low and stir in the shredded cheddar and mozzarella cheese, reserving a small handful of each for topping. Add in the Parmesan cheese as well. Stir until all the cheese is melted and the sauce is smooth.

Season the cheese sauce with garlic powder, onion powder, mustard powder, salt, and pepper to taste.

Add the cooked macaroni to the cheese sauce and stir to combine thoroughly.

In a separate bowl, combine the panko bread crumbs with olive oil and a pinch of salt.

Transfer the macaroni and cheese mixture into a greased 9x13 inch baking dish. Sprinkle the reserved cheddar, mozzarella, and Parmesan cheeses evenly over the top, followed by an even layer of the panko bread crumbs.

Bake in the preheated oven for 25-30 minutes or until the top is golden brown and crispy.

Once done, remove from the oven and let cool for a few minutes. Garnish with fresh chopped parsley before serving.
