4 boneless, skinless chicken breasts

1 cup basmati rice

2 cups chicken broth

1 medium cucumber, grated

1 cup plain Greek yogurt

2 tablespoons fresh dill, chopped

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika

1 ½ cups cherry tomatoes, halved

½ red onion, thinly sliced

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large baking dish, spread the basmati rice evenly on the bottom.

      Place the chicken breasts on top of the rice.

        In a separate bowl, combine chicken broth, salt, pepper, and paprika. Pour this mixture over the chicken and rice, making sure the rice is submersed in liquid.

          In another bowl, prepare the tzatziki sauce by mixing grated cucumber, Greek yogurt, dill, garlic, lemon juice, and a pinch of salt. Stir well and set aside.

            Scatter the halved cherry tomatoes and sliced red onion over the chicken in the baking dish.

              Cover the baking dish tightly with aluminum foil and bake for 35-40 minutes or until the chicken is cooked through (internal temperature of 165°F / 75°C).

                Remove from the oven and let stand for 5 minutes before removing the foil.

                  Drizzle the tzatziki sauce over the chicken and rice just before serving for a refreshing taste.
