1 cup dulce de leche

1 cup heavy whipping cream

3 large eggs, separated

2 tablespoons granulated sugar

1 teaspoon vanilla extract

1 tablespoon gelatin powder

3 tablespoons cold water

A pinch of salt

Instructions
 

Begin by softening the gelatin: In a small bowl, combine the gelatin powder with cold water and let it sit for about 5 minutes until it blooms.

    In a small saucepan over low heat, heat 1/4 cup of the heavy whipping cream until warm but not boiling. Add the bloomed gelatin and stir until completely dissolved. Remove from heat and let cool slightly.

      In a separate bowl, whip the remaining heavy whipping cream until stiff peaks form. Be careful not to over-whip it.

        In another bowl, whisk the egg yolks with sugar and vanilla extract until the mixture is creamy and pale.

          Gradually mix in the dulce de leche into the egg yolk mixture until well combined.

            Add the dissolved gelatin mixture to the dulce de leche and egg yolk mixture, stirring gently to combine.

              In a clean bowl, beat egg whites with a pinch of salt until soft peaks form. Gently fold the egg whites into the dulce de leche mixture in three batches, ensuring to maintain as much airiness as possible.

                Finally, gently fold in the whipped cream in two batches until the mixture is smooth and well blended.

                  Spoon the mousse into individual serving cups or a large bowl and refrigerate for at least 4 hours, or preferably overnight, to set.

                    Serve chilled, garnished with a drizzle of dulce de leche or sprinkled with chocolate shavings for an extra treat.
