Instructions
In a large mixing bowl, combine the almond flour, almond butter, maple syrup, vanilla extract, and salt. Use a spatula or your hands to mix until a dough forms.
Gently fold in the mini chocolate chips and shredded coconut (if using) until evenly distributed throughout the dough.
Using your hands, roll the dough into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
If desired, melt some additional chocolate chips in a microwave-safe bowl and dip the cookie dough bites into the melted chocolate for a coating. Set back onto the parchment paper.
Place the baking sheet in the fridge for about 30 minutes to firm up the cookie dough bites.
Enjoy straight from the fridge, or store in an airtight container in the refrigerator for up to one week.
