1 lb ground beef (80/20 blend for juiciness)

Salt and pepper to taste

4 slices of American cheese

2 burger buns (preferably brioche)

1/2 cup mayonnaise

2 tablespoons ketchup

1 tablespoon Dijon mustard

1 tablespoon sweet pickle relish

1 teaspoon Worcestershire sauce

1 teaspoon smoked paprika

Lettuce leaves (butter or iceberg)

Tomato slices (optional)

Pickles for topping (optional)

Instructions
 

Prepare the Special New York Sauce: In a small bowl, mix together mayonnaise, ketchup, Dijon mustard, sweet pickle relish, Worcestershire sauce, and smoked paprika. Whisk until smooth and set aside.

    Shape the Burgers: In a large bowl, season the ground beef with salt and pepper. Divide the beef into 4 equal portions (about 4 oz each) and form loosely shaped balls. Avoid packing too tightly.

      Heat the Grill or Skillet: Preheat a cast iron skillet or grill over medium-high heat until hot. If using a skillet, add a small drizzle of oil to prevent sticking.

        Smash the Burgers: Place the beef balls on the hot surface, spacing them apart. Using a sturdy spatula, smash each ball down firmly to create a thin patty and make sure the edges are craggy (this helps achieve a great crust).

          Cook the Patties: Season the smashed patties with salt and pepper. Cook for about 2-3 minutes until a nice crust forms on the bottom. Flip the burgers and immediately top each patty with a slice of American cheese. Cover the skillet or grill with a lid to help the cheese melt, cooking for an additional 1-2 minutes.

            Toast the Buns: Meanwhile, while the burgers are finishing, lightly butter the insides of the burger buns and toast them on the grill or in a separate skillet until golden brown.

              Assemble the Burgers: Place a lettuce leaf on the bottom half of each toasted bun. Add a cheesy smash patty on top, then spread a generous amount of the Special New York Sauce over the cheese. Optionally add tomato slices and pickles, then crown with the top half of the bun.
