Ingredients

1 lb ground lamb or beef

1 large onion, finely chopped

2 cloves garlic, minced

2 carrots, diced

1 cup frozen peas

1 tablespoon tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4 cups mashed potatoes (prepared from 2 lbs potatoes)

1 cup shredded Irish cheddar cheese

1/2 cup milk

2 tablespoons butter

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Meat: In a large skillet over medium heat, add the ground lamb or beef. Cook until browned, about 5-7 minutes. Drain any excess fat.

Sauté Vegetables: Add the chopped onion, minced garlic, and diced carrots to the skillet. Cook for another 5 minutes until the vegetables are softened.

Combine Ingredients: Stir in the frozen peas, tomato paste, Worcestershire sauce, thyme, and rosemary. Season with salt and pepper to taste. Cook for an additional 2-3 minutes, ensuring all ingredients are well combined.

Prepare Mashed Potatoes: In a separate bowl, mix the prepared mashed potatoes with shredded cheese, milk, and butter until creamy. Season with salt and pepper.

Assemble the Pie: In a 9x13 inch baking dish, spread the meat and vegetable mixture evenly. Top it with the creamy mashed potatoes, spreading it out smoothly with a spatula.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the edges are bubbling.

Serve: Remove from the oven and let it rest for a few minutes before serving.
