Ingredients

6 large eggs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon fresh lemon juice

1/4 cup celery, finely diced

1/4 cup red bell pepper, finely diced

2 tablespoons fresh chives, chopped

Salt and pepper to taste

Optional: lettuce leaves for serving

Instructions

Boil the Eggs: In a medium saucepan, place the eggs and cover them with cold water. Bring the water to a boil, then reduce the heat to a simmer and let cook for 12 minutes.

Cool the Eggs: After 12 minutes, transfer the eggs to an ice bath (a bowl filled with ice and water) to cool for about 5-10 minutes. This makes peeling easier.

Peel and Chop: Once cooled, peel the eggs and chop them into small pieces, discarding any shell fragments.

Mix the Dressing: In a large bowl, whisk together the mayonnaise, Dijon mustard, garlic powder, onion powder, lemon juice, salt, and pepper until well combined.

Combine Everything: Add the chopped eggs, diced celery, diced red bell pepper, and chopped chives to the bowl. Gently fold the ingredients together until everything is evenly coated in the dressing.

Taste and Adjust: Taste the egg salad and adjust seasoning, adding more salt, pepper, or lemon juice if desired.

Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.

Serve: Serve the egg salad on a bed of lettuce leaves or as a filling in sandwiches or wraps.
