8 rice paper wrappers

1 cup cooked salmon, flaked (fresh or leftover)

1 cup vermicelli noodles, cooked and drained

1 cup mixed greens (like lettuce, spinach, or arugula)

1 small cucumber, julienned

1 large carrot, julienned

1/2 cup fresh herbs (mint, cilantro, and basil mix)

1 avocado, sliced

1 tablespoon sesame oil

Salt and pepper to taste

Cooking spray or olive oil for brushing

Instructions
 

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare a shallow dish of warm water to soak the rice paper wrappers.

      Soak one rice paper wrapper in the warm water for about 10-15 seconds until soft and pliable. Remove and place it gently on a clean, dry surface.

        In the center of the rice paper, add a small handful of mixed greens, a few pieces of flaked salmon, some vermicelli noodles, julienned cucumber, carrot, avocado, and a sprinkle of fresh herbs.

          Drizzle with a tiny bit of sesame oil and season with salt and pepper.

            Fold the sides of the rice paper over the filling, then roll from the bottom up tightly but gently, creating a compact spring roll. Repeat with the remaining wrappers and filling.

              Place the finished spring rolls on the prepared baking sheet. Lightly brush or spray the tops with cooking oil to promote crisping.

                Bake in the preheated oven for 15-20 minutes, or until the spring rolls are golden and crispy.
