Ingredients

4 boneless, skinless chicken breasts

4 slices of ham (e.g., prosciutto or smoked ham)

4 slices of Swiss cheese

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (Panko preferred for extra crunch)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 tablespoon olive oil

1 cup heavy cream

1/2 cup chicken broth

1 teaspoon Dijon mustard

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Preheat the oven to 375°F (190°C).

Place each chicken breast between two sheets of plastic wrap. With a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.

Lay a slice of ham and a slice of Swiss cheese on top of each chicken breast, then carefully roll them up from one end to the other, securing them with toothpicks if needed.

Set up a breading station: In one shallow dish, combine the flour, garlic powder, onion powder, salt, and pepper. In another dish, place the beaten eggs, and in a third dish, put the breadcrumbs mixed with dried thyme.

Dip each rolled chicken breast first in the flour mixture, then in the eggs, and finally in the breadcrumbs, ensuring they are fully coated.

In a large oven-safe skillet, heat the olive oil over medium heat. Add the breaded chicken rolls and sear them for about 3-4 minutes on each side until golden brown.

Once browned, transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F/75°C).

While the chicken is baking, make the creamy sauce: In a small saucepan, combine the heavy cream, chicken broth, and Dijon mustard over medium heat. Whisk continuously until heated through and slightly thickened (about 5-7 minutes). Season with salt and pepper to taste.

Once the chicken is done, remove from the oven and let it rest for a few minutes. Then, slice each chicken cordon bleu roll and drizzle with the creamy sauce.

Garnish with chopped parsley before serving.
