Ingredients
  

1 pound shrimp, peeled and deveined

2 cups cooked jasmine rice

1 avocado, sliced

1 cup cucumber, thinly sliced

1 cup shredded carrots

2 green onions, chopped (both white and green parts)

2 tablespoons sesame oil

Salt and pepper to taste

1 tablespoon soy sauce

1 tablespoon rice vinegar

For Spicy Mayo:

1/2 cup mayonnaise

1 tablespoon Sriracha (adjust to taste)

1 teaspoon lime juice

1 teaspoon sesame oil

Instructions
 

Prepare the Spicy Mayo: In a small bowl, combine mayonnaise, Sriracha, lime juice, and sesame oil. Mix until smooth and set aside in the fridge to chill.
