1 cup quinoa, rinsed

2 cups vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, finely chopped

1 cup corn (canned or frozen)

1/2 cup black beans, rinsed and drained

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 2 limes

3 tablespoons olive oil

Salt and pepper to taste

1 teaspoon cumin

1/2 teaspoon smoked paprika

Instructions
 

In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to low, cover, and let simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let cool.

      While the quinoa cooks, prepare the vegetables. In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, corn, black beans, and cilantro.

        Once the quinoa has cooled, add it to the mixing bowl with the vegetables.

          In a small bowl, whisk together the lime juice, olive oil, salt, pepper, cumin, and smoked paprika to make the dressing.

            Drizzle the dressing over the quinoa and vegetable mixture, tossing gently to combine. Adjust seasoning if needed.

              If desired, sprinkle crumbled feta cheese on top before serving.
