4 ciabatta rolls or panini bread

8 oz fresh mozzarella, sliced

2 large ripe tomatoes, sliced

1 cup fresh basil leaves

3 tablespoons balsamic glaze

2 tablespoons olive oil

Salt and pepper to taste

Freshly ground black pepper (optional)

1 clove garlic, halved (for rubbing)

Instructions
 

Preheat a panini press or grill pan over medium heat.

    While the grill is heating, prepare the ciabatta rolls by slicing them in half horizontally.

      Rub the cut sides of each ciabatta half with the halved garlic clove to infuse a subtle garlic flavor.

        Drizzle the inside of each half with olive oil, then layer the fresh mozzarella slices evenly on each bottom half.

          Add a layer of tomato slices on top of the mozzarella, followed by a generous handful of fresh basil leaves.

            Drizzle balsamic glaze over the basil, then season with salt and pepper to taste.

              Place the other half of the ciabatta on top to create a sandwich press down gently.

                Place the panini in the preheated panini press or grill pan. If using a grill pan, use a heavy skillet to press down the sandwich.

                  Cook for about 5-7 minutes or until the bread is golden brown and the cheese has melted.

                    Carefully remove the panini from the press and let it sit for a minute before cutting it into halves or quarters. This helps the cheese firm up a bit.
