2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup milk

1 large egg

1/4 cup olive oil

1 cup shredded mozzarella cheese

1/2 cup cooked Italian sausage, crumbled

1/2 cup diced pepperoni

1/2 cup diced bell peppers (any color)

1/2 cup marinara sauce (plus extra for dipping)

1/4 cup grated Parmesan cheese

Instructions
 

Preheat your oven to 400°F (200°C) and grease a standard muffin tin or line it with muffin liners.

    In a large bowl, whisk together the flour, baking powder, salt, and dried herbs until well combined.

      In another bowl, mix together the milk, egg, and olive oil until smooth.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

          Gently fold in the mozzarella cheese, cooked Italian sausage, diced pepperoni, diced bell peppers, and marinara sauce. The batter will be thick and chunky.

            Evenly distribute the batter into the prepared muffin tin, filling each cup about 2/3 full.

              Sprinkle the grated Parmesan cheese over the tops of the muffins for an extra cheesy crust.

                Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                  Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack.
