Ingredients
  

1 cup quinoa, rinsed

1 can (14 oz) coconut milk

1 cup vegetable broth

1 tablespoon curry powder

1 teaspoon turmeric

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup spinach, fresh

1 tablespoon soy sauce (or tamari for gluten-free)

Salt and pepper to taste

Fresh cilantro and lime wedges for garnish

Instructions
 

In a medium saucepan, combine quinoa, coconut milk, vegetable broth, curry powder, and turmeric. Bring to a boil over medium-high heat.

    Once it reaches a boil, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and has absorbed the liquid. Remove from heat and let sit covered for an additional 5 minutes.

      While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until it becomes translucent.

        Stir in the minced garlic and diced red bell pepper. Cook for an additional 2-3 minutes until the bell pepper is tender.

          Add the fresh spinach to the skillet, stirring until wilted, then pour in the cooked quinoa.

            Add soy sauce, and season with salt and pepper to taste. Toss everything together until well combined and heated through.

              Remove from heat and serve in bowls, garnished with fresh cilantro and lime wedges for an added zing.
