Ingredients

3 medium cucumbers, thinly sliced

1 cup Greek yogurt

2 tablespoons fresh dill, chopped

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon honey (optional for a hint of sweetness)

Salt and pepper to taste

1/4 cup red onion, finely sliced

1/4 cup cherry tomatoes, halved

1 tablespoon olive oil

1 tablespoon red wine vinegar (optional)

Instructions

Begin by washing the cucumbers thoroughly. After slicing them thinly, place them in a large mixing bowl.

In a separate bowl, combine the Greek yogurt, fresh dill, lemon juice, garlic powder, and honey. Whisk until smooth and well blended.

Pour the yogurt mixture over the sliced cucumbers and gently toss to coat them evenly.

Add the finely sliced red onion and halved cherry tomatoes to the bowl. Season with salt and pepper to taste, then drizzle with olive oil.

If you’re using it, add red wine vinegar for an extra kick of acidity. Toss the salad again to incorporate all the flavors.

Let the salad sit for about 10-15 minutes to allow the flavors to meld together before serving.
