Cuban Mojo Pork Recipe

2 pounds pork shoulder, cut into large chunks

1/2 cup fresh orange juice

1/4 cup fresh lime juice

6 cloves garlic, minced

1/4 cup fresh cilantro, chopped

1 tablespoon cumin

1 tablespoon oregano

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup olive oil

1 red onion, sliced

1 jalapeño, sliced (for a bit of heat)

Fresh lime wedges and cilantro for garnish

Instructions
 

In a large bowl, mix the fresh orange juice, lime juice, minced garlic, chopped cilantro, cumin, oregano, smoked paprika, salt, and black pepper to create the marinade.

    Add the pork shoulder chunks into the marinade, making sure every piece is well-coated. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight for maximum flavor.

      Preheat your oven to 300°F (150°C).

        Remove the marinated pork from the refrigerator. In a large dutch oven or oven-safe pot, heat the olive oil over medium-high heat.

          Sear the pork chunks in batches until browned on all sides, about 5-7 minutes per batch. Once browned, remove them and set aside.

            In the same pot, add the sliced red onion and jalapeño. Sauté for about 3-4 minutes until softened.

              Return the seared pork to the pot and pour any remaining marinade over the top.

                Cover the pot with a lid and place it in the preheated oven. Cook for about 3 hours, or until the pork is tender and easily falls apart with a fork.

                  Remove the pot from the oven and let the pork rest for about 10-15 minutes before shredding it.

                    Serve the shredded pork with extra cilantro and lime wedges for garnishing.
