Cuban Chicken Soup

1 lb (450g) boneless, skinless chicken thighs

1 tablespoon olive oil

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

2 medium tomatoes, chopped

4 cups chicken broth

1 cup corn kernels (fresh or frozen)

1 teaspoon cumin

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

1 tablespoon lime juice

Fresh cilantro, chopped, for garnish

Avocado slices, for serving

Instructions
 

In a large pot, heat olive oil over medium heat. Add diced onion and red bell pepper, and sauté until softened, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the chopped tomatoes to the pot and cook for another 3-4 minutes until they begin to break down.

        Add the chicken thighs, chicken broth, corn, cumin, smoked paprika, bay leaf, salt, and pepper to the pot. Stir to combine.

          Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, until the chicken is cooked through and tender.

            Remove the chicken from the pot and shred with two forks. Return the shredded chicken to the soup.

              Stir in the lime juice and adjust seasoning, if necessary.

                Serve hot, garnished with fresh cilantro and avocado slices on the side.
