Instructions
Place the chicken breasts at the bottom of the crockpot.
Add the black beans, corn, diced tomatoes (with their juices), diced onion, minced garlic, and chicken broth over the chicken.
Sprinkle the cumin, chili powder, smoked paprika, salt, and pepper across the top.
Stir everything gently to combine, ensuring that the chicken is somewhat submerged in the mixture.
Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
Once it’s done, remove the chicken breasts and shred them with two forks. Return the shredded chicken to the soup.
Stir in the lime juice and taste, adjusting seasoning as needed.
Serve hot, topped with tortilla strips, fresh cilantro, diced avocado, and shredded cheese if desired.
Notes
Serve in warm bowls garnished with extra tortilla strips and a wedge of lime on the side for a zesty touch.
