4 cups finely shredded green cabbage

1 cup all-purpose flour

2 large eggs

1/2 cup grated Parmesan cheese

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Oil for frying (canola or vegetable oil)

For the Garlic Sauce:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon fresh parsley, chopped

Salt to taste

Instructions
 

In a large mixing bowl, combine the finely shredded cabbage with salt and pepper. Let it sit for about 10 minutes to soften.

    After resting, squeeze the cabbage gently to remove excess moisture. Add the flour, eggs, Parmesan cheese, green onions, garlic powder, onion powder, and paprika to the bowl. Mix until well combined.

      Heat about 1/2 inch of oil in a large skillet over medium heat.

        Once the oil is hot, scoop about 1/4 cup of the cabbage mixture and carefully drop it into the skillet, flattening it slightly with a spatula. Fry in batches to avoid overcrowding.

          Cook each fritter for about 3-4 minutes on each side or until golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.

            For the garlic sauce, combine the mayonnaise, minced garlic, lemon juice, chopped parsley, and salt in a small bowl. Stir until smooth and well mixed.

              Serve the crispy cabbage fritters warm with a side of garlic sauce for dipping.
