4 large russet potatoes, peeled and cubed

1 cup shredded cheddar cheese

1 cup ground beef

1/2 cup sour cream

1/4 cup milk

2 tablespoons butter

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs (for coating)

Vegetable oil (for frying)

Fresh chives, chopped (for garnish)

Instructions
 

Boil the Potatoes: Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let them cool slightly.

    Prepare the Beef Filling: In a skillet over medium heat, cook the ground beef until browned and cooked through. Drain excess fat, and season with garlic powder, onion powder, salt, and pepper. Mix well and set aside to cool.

      Mash the Potatoes: In a large mixing bowl, combine the drained potatoes, sour cream, milk, and butter. Mash until smooth and creamy. Season with salt and pepper to taste.

        Form the Patties: Take a portion of the mashed potato mixture and flatten it in the palm of your hand. Add a spoonful of the beef mixture and a sprinkle of cheddar cheese in the center. Fold the potatoes over to encase the filling, forming a patty. Repeat with remaining ingredients.

          Coat the Patties: Roll each potato patty in breadcrumbs until fully coated. Set aside on a plate.

            Fry the Patties: In a large frying pan, heat enough vegetable oil over medium heat to submerge the patties slightly. Once the oil is hot, carefully place the patties in the pan, a few at a time, without overcrowding. Fry until golden brown and crispy, about 3-4 minutes on each side. Transfer to a paper towel-lined plate to drain excess oil.

              Serve: Garnish the crispy stuffed potatoes with freshly chopped chives before serving.
