Ingredients
  

1 lb baby potatoes (preferably Yukon Gold)

4 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup cooked bacon bits

¼ cup sour cream

2 tablespoons chives, chopped

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Rinse the baby potatoes under cold water and pat them dry. Place each potato on a cutting board and slice them at intervals (approximately 1/4 inch apart) without cutting all the way through, creating a fan effect.

      In a small bowl, mix the olive oil, garlic powder, smoked paprika, salt, and pepper.

        Gently brush the olive oil mixture over each potato, ensuring it seeps into the slices.

          Place the seasoned potatoes on the prepared baking sheet and bake for about 30-35 minutes, or until the edges are crispy and the potatoes are tender.

            Remove the potatoes from the oven and sprinkle shredded cheddar cheese and bacon bits evenly over each potato.

              Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                Let the potatoes cool slightly, then drizzle with sour cream and sprinkle over chopped chives for garnish.

                  Serve warm and enjoy these delicious bites!
