2 large russet potatoes

1 small onion, finely grated

1 clove garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 cup all-purpose flour

1 large egg, beaten

2 tablespoons olive oil (for frying)

Fresh parsley, chopped (for garnish)

Instructions
 

Peel the russet potatoes and grate them using a box grater or a food processor.

    Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture. This step is crucial for achieving crispy patties.

      In a large bowl, combine the grated potatoes, grated onion, minced garlic, salt, black pepper, smoked paprika, flour, and beaten egg. Mix until everything is well combined.

        Heat olive oil in a large skillet over medium heat. Once hot, take a small handful of the potato mixture and form it into a patty, about ½ inch thick.

          Carefully place the patty in the skillet. Repeat with more patties, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side, until golden brown and crispy.

            Once cooked, transfer the patties to a plate lined with paper towels to absorb excess oil.

              Continue until all the mixture is cooked. Garnish with chopped parsley before serving.
