400g pasta (penne or fettuccine work well)

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 can (400g) crushed tomatoes

1 cup heavy cream

1 teaspoon chili flakes (adjust to taste)

1 teaspoon dried oregano

1 cup fresh basil leaves, chopped

Salt and pepper to taste

Grated Parmesan cheese for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté for about 5 minutes until the onion is translucent and fragrant.

      Add Tomatoes and Spices: Pour in the crushed tomatoes and stir in the chili flakes and oregano. Allow the mixture to simmer for about 10 minutes, letting the flavors meld together. Season with salt and pepper to taste.

        Incorporate the Cream: Lower the heat and slowly add the heavy cream to the tomato sauce, stirring until the sauce is creamy and well combined. Allow to simmer gently for about 5 more minutes.

          Blend in the Pasta: Add the cooked pasta to the sauce, tossing gently to coat. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
