Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Add the ground turkey or beef to the pot. Cook until browned and fully cooked through, breaking it apart with a spatula as it cooks.
Stir in the taco seasoning and cook for an additional 2 minutes, allowing the flavors to meld.
Pour in the chicken broth, followed by the diced tomatoes, black beans, and corn. Stir everything together and bring the mixture to a gentle simmer.
Let the soup simmer for about 10-15 minutes to develop the flavors, stirring occasionally.
Remove the pot from heat and stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is creamy.
Taste and adjust seasoning with salt and pepper as needed.
Notes
Serve with fresh cilantro, avocado, and lime wedges for added flavor. Tortilla chips make a great side!
