8 oz (225 g) whole wheat spaghetti

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, chopped

1 cup heavy cream (or coconut cream for vegan option)

1/2 cup grated Parmesan cheese (or nutritional yeast for vegan option)

1 teaspoon lemon zest

Salt and pepper to taste

Crushed red pepper flakes (optional, for heat)

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.

    Sauté Garlic and Spinach: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 3-4 minutes.
