300g pasta of your choice (fettucine or penne recommended)

2 tablespoons olive oil

4 cloves garlic, finely minced

250g fresh spinach, washed and roughly chopped

200ml heavy cream

100g grated Parmesan cheese

1 teaspoon lemon zest

Salt and pepper to taste

Pinch of nutmeg (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant but not browned.

      Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes, stirring occasionally.

        Create the Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Add the Parmesan cheese, lemon zest, salt, pepper, and a pinch of nutmeg if using. Stir until the cheese has melted and the sauce is creamy.

          Combine Pasta and Sauce: Add the drained pasta to the spinach and cream sauce. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency. Toss well to ensure the pasta is evenly coated.

            Serve: Divide the creamy spinach and garlic pasta among plates. Garnish with fresh basil leaves if desired and extra Parmesan cheese.
