1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

2 tablespoons olive oil

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Grated cheddar cheese (optional, for serving)

Instructions
 

Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Add minced garlic and sauté for another minute until fragrant.

      Stir in the diced potatoes, vegetable broth, dried thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until the potatoes are tender.

        Using an immersion blender, carefully blend the soup until smooth and creamy. If you prefer a chunkier texture, blend only half of the soup.

          Stir in the heavy cream and heat through over low heat. Adjust seasoning with extra salt and pepper if needed.
