Ingredients

2 large russet potatoes, peeled and cubed

1/2 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup panko breadcrumbs

2 large eggs, beaten

Oil for frying

Instructions

Boil the Potatoes: In a large pot, bring water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain and let them cool slightly.

Mash Mixture: In a mixing bowl, mash the boiled potatoes until smooth. Stir in the cream cheese, cheddar cheese, Parmesan cheese, green onions, garlic powder, paprika, salt, and pepper. Mix until the ingredients are combined and creamy.

Form the Puffs: Use your hands to shape the potato mixture into small balls or puffs, around 1-2 inches in size, ensuring they are packed tightly.

Prepare for Frying: Place the beaten eggs in one bowl and the panko breadcrumbs in another. Dip each potato puff first into the beaten egg, ensuring it is coated, and then roll it in the panko breadcrumbs until fully covered.

Fry the Puffs: Heat oil in a deep frying pan over medium heat (around 350°F or 175°C). Fry the potato puffs in batches, cooking for 3-4 minutes per side or until golden brown and crispy. Remove and drain on paper towels.

Serve: Serve the creamy potato puffs warm, garnished with extra green onions or a sprinkle of paprika for added color.

              - Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 4-6

Presentation Tips: Serve on a platter with a side of sour cream or ranch dressing for dipping. Consider adding a sprinkle of fresh herbs for a pop of color!
