Ingredients
  

1 package frozen pierogi (about 16 ounces)

1 pound turkey sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

2 cups spinach, fresh or frozen

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Add the sliced turkey sausage and cook for about 5-7 minutes, or until browned. Use a spatula to break apart any large pieces as they cook.

      Add the diced onion to the skillet and sauté for 3-4 minutes, until the onion becomes translucent.

        Stir in the minced garlic and cook for an additional minute until fragrant.

          Add the frozen pierogi to the skillet, carefully mixing to combine with the sausage and onions.

            Pour in the heavy cream and add the Dijon mustard and smoked paprika. Stir well to coat the pierogi and sausage evenly.

              If using fresh spinach, add it now, allowing it to wilt into the mixture. If using frozen spinach, let it thaw beforehand and then add it to the skillet.

                Season the mixture with salt and pepper to taste. Cover the skillet and let it simmer on low heat for about 10 minutes, allowing the flavors to meld and the pierogi to heat through.

                  After 10 minutes, uncover the skillet and give it a good stir. Allow it to cook for an additional 2-3 minutes until the sauce thickens slightly.

                    Remove from heat and garnish with freshly chopped parsley before serving.
