1 lb (450g) boneless, skinless chicken breast, diced

1 cup wild rice

4 cups chicken broth

1 cup heavy cream

2 cups cremini mushrooms, sliced

1 cup carrots, diced

1 cup celery, diced

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (plus more for garnish)

Salt and pepper to taste

1 tablespoon lemon juice

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced chicken and sauté until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

      Add the minced garlic and sliced mushrooms to the pot. Cook for an additional 3-4 minutes until the mushrooms are softened and have released their moisture.

        Stir in the wild rice and cook for 1 minute, allowing it to absorb some of the flavors.

          Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for about 40-45 minutes, or until the wild rice is tender and cooked through.

            Once the rice is ready, stir in the cooked chicken, heavy cream, thyme, parsley, salt, and pepper. Allow the soup to warm through on low heat for about 5 minutes.

              Just before serving, stir in the lemon juice for a fresh zing and adjust seasoning if necessary.
