300g fettuccine or linguine pasta

200g fresh spinach, washed

250g mushrooms (button or cremini), sliced

3 cloves garlic, minced

1 small onion, finely chopped

200ml heavy cream

50g grated Parmesan cheese, plus extra for serving

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and minced garlic, and sauté for 2-3 minutes until the onion becomes translucent.

      Add the Mushrooms: Stir in the sliced mushrooms and dried thyme. Cook until mushrooms are golden brown, about 5-7 minutes. Season with salt and pepper to your taste.

        Incorporate the Spinach: Add the fresh spinach to the skillet and cook for an additional 2-3 minutes until wilted, stirring occasionally.
