Ingredients

2 salmon fillets

1 cup button mushrooms, sliced

4 cloves garlic, minced

1 cup heavy cream

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides.

Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets skin-side down and cook for about 4-5 minutes, until the skin is crispy. Carefully flip and cook for another 3-4 minutes. Once cooked through, remove the salmon and set aside.

Sauté the Mushrooms: In the same skillet, melt the butter. Add the sliced mushrooms and sauté for 4-5 minutes until golden brown and tender.

Add Garlic: Stir in the minced garlic and dried thyme, cooking for an additional 1-2 minutes until the garlic is fragrant.

Make the Cream Sauce: Pour in the heavy cream and bring to a gentle simmer. Let it cook for about 3-4 minutes until slightly thickened. Stir frequently to prevent burning.

Combine Salmon and Sauce: Return the cooked salmon to the skillet, spooning some of the sauce over the fillets. Allow everything to simmer gently for 2-3 more minutes to warm the salmon through.

Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve immediately with your choice of side (like mashed potatoes or steamed veggies).
