1 lb sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

2 cups baby potatoes, halved

1/2 cup heavy cream

1/4 cup sour cream

1 tablespoon olive oil

Chopped parsley for garnish

Prepare the Mashed Potatoes: In a pot, add the halved baby potatoes and enough water to cover them. Bring to a boil and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

    Mash the Potatoes: Add in the heavy cream, sour cream, salt, and pepper to taste. Mash until smooth and creamy. Keep warm and set aside.

      Cook the Steak Bites: In a large skillet, heat olive oil over medium-high heat. Season the steak cubes with salt and pepper. Add the steak to the skillet and cook for about 3-4 minutes, turning occasionally, until browned on the outside and desired doneness is reached.

        Add Garlic and Herbs: Reduce the heat to medium and push the steak bites to one side of the skillet. In the remaining space, add butter, minced garlic, rosemary, and thyme. Sauté for about 1-2 minutes until fragrant.

          Combine: Once the garlic is fragrant, mix everything together in the skillet so that the steak bites are coated in the creamy garlic butter. Cook for an additional minute.
