1 cup red lentils, rinsed

1 can (14 oz) coconut milk

4 cups vegetable broth

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons curry powder

1 teaspoon turmeric

1 teaspoon cumin

1 medium carrot, diced

1 bell pepper (red or yellow), diced

2 cups spinach, packed

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat.

    Add the diced onion and sauté until translucent, about 5 minutes.

      Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

        Sprinkle the curry powder, turmeric, and cumin into the pot, stirring for about 30 seconds to bloom the spices.

          Add in the diced carrot and bell pepper, cooking for another 3-4 minutes until slightly softened.

            Pour in the vegetable broth and add the rinsed lentils. Bring the mixture to a boil.

              Reduce the heat to simmer and cover the pot. Cook for about 20-25 minutes, or until the lentils are tender.

                Once the lentils are cooked, stir in the coconut milk and spinach, allowing the spinach to wilt for about 2-3 minutes.

                  Season the soup with salt and pepper to taste.

                    For a creamier texture, use an immersion blender to blend a portion of the soup while leaving some lentils whole for texture. Alternatively, you can carefully blend it in batches in a regular blender.

                      Serve hot, garnished with fresh cilantro if desired.
