1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

4 cups diced potatoes (about 4 medium)

4 cups chicken broth

1 cup diced cooked ham

1 cup heavy cream

2 cups shredded sharp cheddar cheese

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Chopped green onions or parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 4-5 minutes.

    Add the diced carrots and celery to the pot, cooking for an additional 5 minutes until they begin to soften.

      Stir in the diced potatoes, chicken broth, dried thyme, and paprika. Bring the mixture to a boil, then reduce heat and let simmer for 15-20 minutes, or until the potatoes are tender.

        Once the potatoes are cooked, stir in the diced ham and heavy cream. Allow the chowder to simmer for another 5 minutes.

          Remove the pot from heat and blend in the shredded cheddar cheese, stirring until melted and creamy. Season with salt and pepper to taste.

            If the chowder is too thick, you can add a little more chicken broth to reach your desired consistency.

              Serve immediately, garnished with chopped green onions or parsley.
