1 lb (450g) kielbasa, sliced

1 can (15 oz) white beans, drained and rinsed

1 can (15 oz) cannellini beans, drained and rinsed

1 medium onion, chopped

2 cloves garlic, minced

3 cups low-sodium chicken broth

1 cup heavy cream

1 cup fresh spinach, chopped

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Chopped fresh parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the sliced kielbasa to the pot, cooking until browned, about 5-7 minutes.

        Incorporate the white beans and cannellini beans, stirring to combine.

          Pour in the chicken broth and bring the mixture to a gentle boil.

            Reduce the heat and let simmer for about 10 minutes, allowing the flavors to meld.

              Stir in the heavy cream, smoked paprika, and dried thyme. Mix well and let simmer for another 5 minutes, until heated through.

                Add the chopped spinach, stirring until wilted, about 2 minutes.

                  Season the soup with salt and pepper to taste.

                    Serve hot, garnished with chopped parsley.
