500g fresh mixed mushrooms (button, shiitake, cremini), sliced

1 medium onion, diced

2 cloves garlic, minced

3 tablespoons unsalted butter

3 cups vegetable broth

1 cup heavy cream

1 tablespoon truffle oil (or to taste)

1 teaspoon thyme leaves (fresh or dried)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for another minute, being careful not to burn it.

      Add the sliced mushrooms to the pot and cook until they are tender and their moisture has mostly evaporated, about 7-10 minutes.

        Sprinkle in the thyme leaves and stir well. Season with salt and pepper to taste.

          Pour in the vegetable broth and bring the mixture to a boil. Reduce to a simmer and let cook for 15 minutes, allowing the flavors to develop.

            Using an immersion blender, carefully blend the soup until smooth (or transfer it in batches to a countertop blender).

              Return the blended soup to the pot, stir in the heavy cream, and heat gently over low heat until warmed through.

                Taste and adjust seasoning if necessary. Drizzle in the truffle oil, stirring to combine.

                  Ladle the soup into bowls and garnish with chopped parsley before serving.
