Ingredients

1 cup all-purpose flour

1 cup shredded mozzarella cheese

1/2 cup cottage cheese

1 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon Italian seasoning

1/4 teaspoon salt

1/4 teaspoon black pepper

1 small red bell pepper, diced

1/2 cup sliced mushrooms

1/4 cup black olives, sliced

1/2 cup pizza sauce

1/2 cup additional mozzarella cheese for topping

Fresh basil leaves for garnish (optional)

Instructions

Preheat your oven to 425°F (220°C) and grease a 9-inch pie or pizza pan.

In a large mixing bowl, combine the all-purpose flour, shredded mozzarella cheese, cottage cheese, baking powder, garlic powder, Italian seasoning, salt, and black pepper. Stir until the mixture forms a dough-like consistency.

Spread the dough mixture evenly into the greased pan, pushing it up the sides to form a crust.

Pre-bake the crust in the preheated oven for about 10 minutes, until it starts to firm up slightly.

While the crust is baking, sauté the diced red bell pepper and sliced mushrooms in a small skillet over medium heat for about 3-4 minutes, or until they are slightly tender.

Remove the crust from the oven and spread the pizza sauce evenly over the surface.

Sprinkle half of the additional mozzarella cheese on top of the sauce, then layer the sautéed vegetables and sliced black olives over the cheese.

Finish by sprinkling the remaining mozzarella cheese over all the toppings.

Return the pizza to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

Once done, take it out of the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired before slicing.
