2 cups fresh cranberries, rinsed

1 medium red onion, finely chopped

1 red bell pepper, finely diced

1 jalapeño, seeds removed and minced

1/4 cup fresh cilantro, chopped

2 tablespoons honey or maple syrup (for a vegan option)

1 tablespoon lime juice

Salt and pepper to taste

Optional: 1/4 cup diced avocado for creaminess

In a food processor, pulse the fresh cranberries a few times until coarsely chopped. Be careful not to over-process; you want some texture.

    In a large mixing bowl, combine the chopped cranberries with the finely chopped red onion, red bell pepper, and minced jalapeño.

      Add the chopped cilantro, honey (or maple syrup), and lime juice to the bowl. Mix everything well to ensure the flavors are evenly distributed.

        Season the salsa with salt and pepper to taste; adjust sweetness and acidity as desired.

          If using, gently fold in the diced avocado for added creaminess, being careful not to mash it too much.

            Cover the bowl with plastic wrap and let the salsa sit in the fridge for at least 30 minutes to allow the flavors to meld.
