4 boneless, skinless chicken thighs

1 cup fresh or frozen cranberries

1 large orange, zested and juiced

1/4 cup honey

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon olive oil

1 teaspoon fresh ginger, grated

2 garlic cloves, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, for garnish (optional)

Instructions
 

Prepare the Marinade: In a bowl, whisk together orange juice, honey, soy sauce, ginger, garlic, orange zest, salt, and pepper until well combined.

    Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is evenly coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Cook the Cranberries: In a small saucepan, add the cranberries and 1/4 cup of the marinade (from the chicken). Cook over medium heat, stirring occasionally until the cranberries begin to pop and soften, about 5-7 minutes. Remove from heat and set aside.

          Sear the Chicken: In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Remove the chicken from the marinade, reserving the marinade, and sear the chicken for about 3-4 minutes on each side until golden brown.

            Bake the Chicken: Pour the reserved marinade over the chicken and then top with the cooked cranberries. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
