2 cups cooked, shredded chicken

1 cup long-grain rice, rinsed

1 medium onion, diced

3 cloves garlic, minced

4 carrots, sliced

3 celery stalks, diced

6 cups chicken broth

1 tablespoon ranch seasoning mix

1 cup cream cheese, cubed

1 teaspoon dried thyme

½ teaspoon black pepper

Salt to taste

Fresh parsley, for garnish

In a large pot over medium heat, add the diced onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.
