1 pound ground beef

1 cup diced onion

1 cup diced bell peppers (any color)

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 package (32 oz) frozen tater tots

Optional: Chopped green onions and sour cream for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, brown the ground beef. Add the diced onion, bell peppers, and minced garlic, cooking until the vegetables are tender, about 5-7 minutes.

      Stir in the black beans, corn, cream of mushroom soup, chili powder, cumin, salt, and pepper. Mix well and let it simmer for about 3-5 minutes until heated through.

        Spread the meat and vegetable mixture evenly in the bottom of a greased 9x13 inch baking dish.

          Layer the frozen tater tots on top of the beef mixture, arranging them in a single layer covering the entire surface.

            Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.

              Remove the casserole from the oven and sprinkle the shredded cheddar cheese evenly over the top. Return to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.

                Once done, let the casserole cool for about 5 minutes before serving.
