1 lb ground beef

1 lb smoked sausage, sliced

1 large onion, chopped

3 cloves garlic, minced

2 cups beef broth

1 can (14 oz) diced tomatoes

2 cups frozen mixed vegetables (corn, carrots, and green beans)

2 medium potatoes, cubed

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, for garnish

Instructions
 

In a large pot, heat olive oil over medium-high heat. Add the chopped onion and minced garlic, cooking until the onion becomes translucent (about 3-4 minutes).

    Add the ground beef to the pot. Break it up with a spoon and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Stir in the sliced smoked sausage and cook for an additional 3-4 minutes until slightly browned.

        Add the cubed potatoes, beef broth, diced tomatoes (with their juice), and frozen mixed vegetables into the pot.

          Season with chili powder, cumin, smoked paprika, salt, and pepper, and mix everything well.

            Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the potatoes are tender and the flavors are well combined.

              Taste and adjust seasoning if needed.

                Serve the stew in bowls, garnished with fresh parsley.
